The Shotoh, which means "small knife" in Japanese, is used in Japanese cooking for peeling and cutting fruits and vegetables. The kitchen knife has an ergonomic handle design made of birch, providing a lot of comfort without fatigue while working. The knife has been very finely honed with the Honbazuke trigger on a wet grindstone, a traditional Japanese hand honing process in which the blade is sharpened and polished in three steps, giving the blade its special sharpness.
