The knife has been very finely polished with the Honbazuke trigger on a wet grindstone, a hand trigger used in traditional Japanese knife making. In this process, the blade is sharpened and polished in a special procedure in three steps, which gives the blade its special sharpness. The CRYODUR blade was ice-hardened - so it is particularly cutting despite your high hardness, at the same time very flexible.
