The Santoku is traditionally prized in Japan as a versatile knife, as it is equally well suited for meat and fish as it is for vegetables. The knife has a handle made of birch, thus providing a lot of comfort during cutting without fatigue. The blade was sharpened with the Honbazuke trigger. In this hand trigger, traditionally used in Japanese knife making, the blade is sharpened and polished in three steps, making the edge particularly sharp due to its fine surface. The multi-layer CRYODUR blade has been hardened in a specially developed hardening process for steels above 60 HRC, the result: exceptional hardness and edge retention with high flexibility. The knife owes many of its characteristics to its place of manufacture, Seki, the traditional Japanese forging stronghold: sharpness, precision and outstanding aesthetics.
