The knives from the 5000MCD series look simply fascinating: A sharp blade with Japanese Honbazuke trigger in unique Flower Damascus, optimally complemented by a handle made of high-quality Masur birch for an individual, natural design. The Santoku is traditionally prized in Japan for its versatility: it is used for cutting meat, fish and vegetables. The seamless birch handle is ergonomically shaped, making the knife particularly comfortable to hold. The knife has been very finely polished with the Honbazuke trigger on a wet grindstone, a traditional Japanese hand trigger in which the blade is sharpened and polished in three steps, giving the blade its special sharpness. The CRYODUR blade was hardened in a special hardening process for multilayer steel, the result: extraordinary hardness and edge retention with high flexibility. The knife was manufactured in Seki, a traditional Japanese forging center. It combines German engineering and Japanese craftsmanship.
